How to Preserve a Garden Harvest: Canning, Freezing, and Drying Without Losing the Batch

A garden does not ripen politely. It ignores your schedule entirely and then, somewhere in the back half of summer, hands you forty pounds of tomatoes in a single week, followed by more zucchini than any household has ever wanted. Whatever you cannot eat, give away, or preserve in the next few days becomes compost, which is a noble end for a vegetable but a disappointing one for four months of watering.

Preserving is the answer, and it is genuinely satisfying: a shelf of jars you filled yourself is one of the few kinds of food storage that people actually enjoy building. It is also the kind with the most ways to go wrong, because unlike buying canned beans, you are the one responsible for whether the contents are safe a year from now.

This guide covers the practical version. How to pick a method per crop rather than learning one method and forcing everything through it, the one safety rule that matters more than all the others combined, what actually goes wrong and how to avoid it, and the unglamorous last step that decides whether any of this gets eaten: knowing what is in the jars six months later.

Pick the method to fit the crop, not the other way around

Most people learn one preservation method, usually canning, and then spend years trying to can things that would have been better frozen. The methods are not interchangeable. Each one is very good at a particular set of foods and mediocre at the rest.

The practical read on that table: freezing is the fastest and the least durable, dehydrating is the slowest and the most space-efficient, and canning sits in the middle while being the only one that survives a long power outage. Most households end up using three or four of these in a season, which is the correct answer. A crop that stores beautifully in a cool basement should not be occupying a jar.

It is also worth saying plainly: some things are not worth preserving. Lettuce, celery, and most summer squash come out of every method disappointing. If nobody in the house eats pickled beets, a shelf of pickled beets is not a harvest saved, it is a harvest relocated. The same rule that governs a long-term food supply applies here: store what you eat.

The one safety rule: acid decides everything

If you take a single thing from this guide, take this. Every canning decision follows from how acidic the food is, because acidity determines whether Clostridium botulinum can grow in a sealed jar. That organism is the entire reason canning has rules. Its spores survive boiling water, it thrives in exactly the low-oxygen environment a sealed jar creates, and the toxin it produces is one of the most dangerous substances in food safety. It does not smell or taste like anything.

The line sits at a pH of 4.6.

High-acid foods (pH 4.6 or below) can be safely processed in a boiling water bath at 212°F. That covers most fruit, jams and jellies, properly acidified pickles, and anything vinegar-based.

Low-acid foods (above pH 4.6) must be pressure canned, because they require roughly 240°F to destroy botulism spores, and a pot of boiling water physically cannot reach that temperature. This covers essentially every vegetable that is not pickled: green beans, corn, carrots, potatoes, peas, squash, plus all meats, broths, and mixed soups.

There is no substitute for a pressure canner with low-acid food. Not a longer boil, not more salt, not a family recipe that has always worked. The temperature is the mechanism, and boiling water cannot produce it.

Tomatoes deserve their own paragraph because they are the single most common mistake. Modern tomato varieties hover right at the line, and some sit above it, so tested recipes now call for added acid: one tablespoon of bottled lemon juice per pint or two per quart, or a quarter teaspoon of citric acid per pint. Use bottled lemon juice rather than fresh, because bottled has a standardized acidity and a lemon off your counter does not. Add the acid even if the recipe you grew up with did not.

The related rule: use tested recipes and do not improvise the ratios. Adding onions or peppers to a tested salsa recipe lowers its acidity and quietly moves it across the line. The National Center for Home Food Preservation, your state extension service, and the current Ball guide all publish recipes that have actually been lab-tested for exactly this. Cooking is a place for creativity. Canning is a place for following the recipe and being creative about what you serve alongside it.

Altitude changes the numbers, and it is not optional

Water boils cooler as you go up, so the same processing time delivers less heat. Anywhere above 1,000 feet, tested recipes require adjustment: longer processing time in a water bath, higher pressure in a pressure canner.

This trips up an enormous number of people, because recipes are written at sea level and the adjustment charts live in the fine print. If you are canning in Denver, Salt Lake City, Albuquerque, or anywhere across the Mountain West, sea-level times are not close enough. Look up your actual elevation once, write it on an index card, and tape it inside the cupboard where the canner lives.

What actually goes wrong

Most lost batches come from a short list of very ordinary mistakes.

Jars that do not seal. Usually a chipped rim, a bit of food on the sealing surface, a reused flat lid, or a band tightened too hard. Flat lids are single-use. Wipe every rim with a damp cloth before the lid goes on, and tighten bands only to fingertip tight so air can escape during processing. A jar that has not sealed within 24 hours is not a failure, it is dinner this week: refrigerate it and use it.

Wrong headspace. Too little and the contents boil out and ruin the seal. Too much and there is air left in the jar. Tested recipes specify it for a reason: roughly a quarter inch for jams, half an inch for fruits and pickles, and a full inch for low-acid foods that get pressure canned.

Liquid loss during processing. Jars come out half empty because the pressure dropped too fast or the canner was moved too soon. Let a pressure canner depressurize on its own, and let jars rest in the canner for a few minutes after the heat goes off.

The methods that are no longer considered safe. Open kettle canning, where hot food goes into jars and the lids seal on their own. Oven canning. Dishwasher canning. Inverting jars to force a seal. Every one of these produces a jar that looks sealed and was never processed. They were common advice decades ago and they are not acceptable now.

Skipping the blanch when freezing. Vegetables carry enzymes that keep degrading color, texture, and flavor at freezer temperatures. A brief blanch and an ice bath shuts them down. Skip it and your green beans are technically fine and genuinely unpleasant by February. Freeze in flat, thin packages so things thaw fast and stack well, which is the same logic behind everything in our guide to organizing a freezer.

Storing jars with the bands on. Take the rings off before the jars go on the shelf. A band can hold a failed lid in place and hide the fact that the seal broke, which is precisely the information you want a jar to volunteer.

How long home-preserved food actually keeps

Properly processed, sealed home-canned food stays safe well past a year. Quality is the thing that fades. The standard guidance is to use home-canned goods within 12 to 18 months, and the reasoning is the same as with the dates stamped on store-bought food, which we cover in what expiration dates actually mean: the date is about quality, not a safety cliff.

Store jars somewhere cool, dark, and dry. Heat and light are what degrade them, so the worst common spot is a shelf above the stove and the second worst is a garage that swings from 30°F to 110°F across the year. Freezing temperatures can also break seals.

Throw out any jar with a bulging or unsealed lid, liquid that spurts when opened, visible mold, murky brine that should be clear, or an off smell. Do not taste it to check. With low-acid foods there is no reliable sensory test, which is exactly why the processing rules exist.

The step that decides whether you eat any of it

Here is the pattern that plays out in a lot of basements. Someone has a tremendous canning season. Sixty jars go on the shelf in August. By November they can identify most of them. By the following March there are four jars of something dark red that might be salsa, might be pasta sauce, and might be from two seasons ago, and nobody wants to be the one to find out. The next August, more jars go in front of them.

The harvest was not lost in the garden. It was lost on the shelf, which is a much more annoying way to lose it.

Two habits prevent it entirely, and both take about ten seconds per jar.

Label every jar with contents and the year. Write on the flat lid with a marker, or use a label on the jar itself rather than the band, since bands get swapped. Contents and year is the minimum. If you can multiple batches, adding the month helps you track which recipe adjustment you liked.

Put the new jars behind the old ones. This is just FIFO rotation, and it is the difference between a pantry that cycles and a pantry that accumulates. Two minutes of shuffling on canning day saves you from finding 2024 jars behind 2026 jars.

And then there is the question the shelf itself cannot answer: how much of anything do you actually have? Twenty-two quarts of tomatoes sounds like plenty until you realize you use them twice a week. Eleven jars of pickles sounds modest until you notice nobody has opened one since spring. That gap between what you canned and what you use is what tells you what to plant more of next year, and what to stop planting entirely.

This is the same problem as tracking any other kind of storage, and it is what a pantry inventory is for. Log the jars as they come off the counter, note the year, and you get a running count of what is on the shelf, a nudge when something is aging past its best window, and, at the end of a season, an honest record of what your household actually ate versus what you optimistically put up. For households building a year supply, home-canned goods are usually the part of the shelf that gets tracked the least and moves the most.

A first season that goes well

  1. Start with high-acid foods in a water bath. Jam, pickles, or peaches. Cheap equipment, forgiving process, immediate payoff.
  2. Freeze anything you are not sure about. It is the lowest-risk method and the best use of a first overwhelming week.
  3. Look up your altitude adjustment before your first batch, not during it.
  4. Use a tested recipe exactly as written the first time through, then adjust seasoning within the recipe's limits, never the acid ratio.
  5. Buy the pressure canner only when you have a crop that needs it, like green beans or corn. It is a real purchase and a real learning curve, and it is worth both.
  6. Label every jar with contents and year before it leaves the counter. You will not remember. Nobody remembers.
  7. Log what you put up, and check it in February. Next year's garden plan is hiding in that list.

Preserving well is less about equipment than about deciding, before the harvest lands on the counter, what is going in a jar and what is going in the freezer and what is simply going to the neighbors. The rest of it is following tested instructions carefully, which is a much smaller skill than it looks from outside.

And keep the record. A season of preserving is real work and real money saved, but only if the jars get opened.
