A year of food is the number people name when you ask how prepared they want to be. It is a satisfying target: round, serious, unmistakably beyond a weather scare. It is also the target where the most money gets wasted, because a year is long enough that the mistakes have time to compound and expensive enough that the mistakes hurt.
The classic version of the mistake looks like this. Somebody decides on a year, gets enthusiastic, and buys the part that feels most like preparedness: buckets of wheat, a pallet of freeze-dried entrees, fifty pounds of beans. A year later they have a garage full of calories and, if they are honest, about three weeks of food they would actually eat, no way to cook most of it, and no idea what is in the back row. That is not a one-year supply. It is a one-year supply of one thing, plus storage costs.
This is a guide to building the other version: a year of food you would genuinely eat, bought gradually, at a pace your budget and your shelves can absorb. It covers the actual math, the order to buy in, what a realistic timeline looks like, and the part almost every guide skips, which is what happens after it is built.
Start with the math, because it is smaller than you think
A year of food sounds enormous until you write it down, at which point it becomes merely large. The standard planning figure is around 2,000 calories per person per day. Multiply by 365 and one adult needs roughly 730,000 calories for a year.
That number is intimidating in the abstract and quite manageable in staples, because dry staples are extraordinarily calorie-dense per dollar and per cubic foot. Rough per-person, per-year quantities that show up in most long-term storage planning look like this:

Those are planning figures, not commandments. A household with young children needs less per head; one with three teenage boys and a physical job needs considerably more. The staples-only trap
Here is the problem with the table above: a year of exactly those things is technically survivable and practically miserable. Grains, beans, oil and salt will keep a person alive. They will not keep a household functioning, because eating them exclusively for months does something to morale that is hard to appreciate until you are doing it.
There is a well-documented phenomenon usually called appetite fatigue, where people, especially children and the elderly, will simply stop eating enough of a monotonous diet even when it is in front of them. Calories on a shelf that nobody will eat are not calories.
A year of food you would not choose to eat is not a year of food. It is a year of food you will eat for about eleven days.
So the staples are the foundation, not the building. Budget alongside them for the things that make staples into meals: spices, bouillon, tomato products, canned or dehydrated vegetables and fruit, canned meat, peanut butter, vinegar, baking soda and yeast, coffee or tea. These are a modest fraction of the total weight and an enormous fraction of whether the plan survives contact with reality.
Build it in three layers, in this order
The single most useful reframe is to stop thinking of a year as one purchase and start thinking of it as three layers with different jobs, different shelf lives, and different buying priorities. Build them in order. Most people build them backwards, which is exactly why they end up with wheat and no dinner.
Layer 1: Two weeks of normal food
Before anything else, get two weeks of the food you already eat. Not special food. The actual contents of your normal grocery list, doubled up: the pasta, the sauce, the canned soup, the cereal, the coffee.
This layer covers the overwhelming majority of what actually happens to people: a bad storm, a job loss, a supply hiccup, a week of illness. It requires no new skills, no new equipment, and no adjustment period, because it is a slightly deeper version of your kitchen. It is also the cheapest layer, since you buy it a few extra items at a time on trips you were making anyway.
Layer 2: Three months of everyday food
Extend the same idea to about ninety days. Still food you normally eat, still rotating through your kitchen, just deeper. This is the layer that carries a household through a genuinely serious disruption without anybody having to learn to bake bread from hard red wheat under pressure.
The discipline here is to store what you eat and eat what you store. A three-month supply that sits untouched is not a supply, it is a countdown, because everyday groceries carry everyday dates. This layer has to move through your kitchen continuously, which means rotation is not optional at this stage, it is the whole mechanism.
Layer 3: Long-term staples for the balance of the year
Only now do the buckets make sense. Wheat, white rice, beans, oats, sugar, salt, powdered milk: properly packaged in sealed containers with oxygen absorbers, kept cool and dark, these last decades rather than years. This is the layer that takes you from three months to twelve, and it is the layer that requires the least ongoing attention, which is exactly why it should be purchased last rather than first.

A realistic timeline and budget
A year of food for one adult, bought as staples in bulk, is a few hundred dollars. Bought as freeze-dried entrees, it is several thousand. The honest answer for most households sits between, because the sensible plan is mostly staples with enough variety layered in to keep it edible.
The mistake is treating it as a single transaction. Buying a year at once means paying whatever this month's prices are, storing food that all expires in the same window, and discovering your packaging or storage mistakes at full scale rather than at small scale. Spreading the purchase over twelve to twenty-four months means you catch problems early, you buy into sales rather than urgency, and your dates are staggered so the whole supply never comes due at once.
A pace of one extra category per month, or a fixed small amount per grocery trip, gets most households to a year within two years without ever feeling like a large expense. That is slower than the enthusiasm wants and considerably better than what the enthusiasm produces. The parts of a year that are not food
A year of food and nothing else is a plan with a hole in it. Three things deserve attention alongside the calories.
Water is first and it is not close. You can go weeks without food and days without water, and unlike food you cannot meaningfully store a year of it: a single person needs a gallon a day, so a year for a family of four is roughly 1,460 gallons, which is a swimming pool, not a shelf. A way to cook matters more than people expect, because most of a long-term supply is inedible without heat and water. Dry beans are a rock. Hard wheat is gravel unless you can grind it. Whatever your cooking plan is, it needs fuel measured in the same units as your food, and a mill if you are storing whole grain.
Everything else that runs out. Medications, first aid, hygiene, batteries, cooking fuel. These are the categories that quietly set your real limit, because a household with twelve months of food and three weeks of a prescription has a three-week plan. This is the same blind spot a preparedness inventory is meant to expose: not what you have most of, but what you would run out of first.
The part nobody plans: keeping it true
Building a year of food is a project with an end. Maintaining one is a practice with none, and the second is where almost all of the loss happens.
Consider what a year of supplies actually is after eighteen months. Some of it has been eaten and not replaced. Some has been moved to make room. Some has been opened. A few things have quietly passed their dates in the back row. Your mental model of what is down there was accurate the week you finished stocking it and has been drifting ever since.
This is why the last thing to build is not a shelf, it is a record. It does not have to be sophisticated. It has to be current, which in practice means updating it has to be fast enough that you will still do it while carrying groceries in from the car. A record that stays true answers the three questions a year of food exists to answer: how many days do we actually have, what is closest to expiring, and where is it. Without one you have supplies. With one you have a supply.
A sane order of operations
- Two weeks of the food you already eat. Buy it a few items at a time on normal trips.
- Two weeks of stored water, plus a filter and a purification method.
- Extend food to three months, still everyday groceries, rotating continuously.
- Add the cooking layer: fuel, a way to boil water, a mill if you plan on whole grain.
- Begin long-term staples, one category at a time, properly packaged. Grains first, then legumes, then fats, then sugars and dairy.
- Layer in the variety that makes staples edible: spices, bouillon, tomato, canned vegetables and meat.
- Fill the non-food gaps: medications, first aid, hygiene, batteries.
- Start the inventory on day one, not at the end. Retrofitting a record onto four hundred pounds of existing storage is the least fun day of this entire project.
Work that list in order and you will never have a garage full of something you cannot cook. You will have a supply that deepens underneath you, made of food you recognize, at a pace you barely notice.
