Most people prepping for an emergency start with food. They picture the shelves of canned goods, the buckets of rice, the freezer full of meat. And then they store almost no water, which is exactly backwards, because food is the thing you have the most slack on and water is the thing you have the least. You can go weeks without eating and be miserable but fine. You can go about three days without water before it becomes a medical emergency, and in a heat wave a lot less than that.
Water is also the supply you can least improvise. When the power is out and the taps run dry, or a boil-water notice goes up after flooding, or a main breaks in the dead of winter, there is no substitute sitting in the cupboard. You cannot ration your way around it and you cannot make it from nothing. This guide is the whole picture: how much water to actually store, which containers are safe and which will poison the well, how long stored water really lasts, where to keep it, and how to make more when the stored supply starts running down.
The rule that ranks water first
Survival instructors teach the “rule of threes”: you can survive roughly three minutes without air, three days without water, and three weeks without food. The numbers are rough and the real figures depend on heat, exertion, and health, but the ranking is the part that matters. Water sits far above food on the list of things that will actually hurt you first.
Nobody plans to run out of water. They plan around food, because food is visible and satisfying to stockpile, and then a two-day outage teaches them which one they actually needed.
This is why every serious preparedness checklist, from FEMA on down, puts water at the top. It is also why, if you only do one thing after reading this, it should be to store a few days of water for every person in your home before you buy another can of anything.
How much: one gallon, per person, per day
The standard planning figure is one gallon per person per day, and it is a floor, not a luxury. Roughly half of that is for drinking and the other half for everything else: cooking, brushing teeth, washing hands, cleaning a wound, basic hygiene. It is easy to forget how much of that gallon is not drinking until you are trying to do all of it out of a single bottle.
That baseline goes up, sometimes sharply, for real households:
- Heat and exertion. Hot weather, a home with no working air conditioning, or physical work can push drinking needs well past half a gallon a day per person.
- Children, nursing parents, and anyone sick. Higher needs, and illness that causes fever, vomiting, or diarrhea raises them a lot. Plan generously here.
- Pets. Easy to overlook and genuinely thirsty. A rough rule is about an ounce of water per pound of body weight per day, so a 50-pound dog wants most of a half-gallon.
Now turn the daily number into a target you can actually store against. The same tiered thinking behind how much food to store for an emergency applies to water:

Two weeks is the number most emergency agencies have quietly moved to, because three days rarely matches how long a real disruption lasts. Do not let the two-week figure stop you from starting, though. Three days of water stored today beats two weeks you keep meaning to get to.
What to store it in (and what to never use)
The container matters as much as the amount, because the wrong one turns your emergency supply into a science experiment. Start with the easy path and work up:
- Commercial bottled water. The simplest option by far. Sealed, tested, and stamped with a date. Buy it, store it, done. Cases of half-liter bottles are also easy to ration and hand out.
- Food-grade water storage containers. Purpose-made 5-gallon jugs, 7-gallon carriers, and 55-gallon barrels sold for water storage. Look for the food-grade marking and a tight-sealing cap. These are the backbone of a larger supply.
- Clean two-liter soda bottles. The best free option. The PET plastic is food-safe and seals well. Rinse, fill with treated tap water, and cap tightly.
Then the ones that quietly ruin a supply:
- Never reuse milk or juice jugs. Milk jug plastic is slightly porous and impossible to fully clean of sugars and proteins. Bacteria will bloom no matter how well you rinse, and the jugs themselves biodegrade and split. This is the single most common water storage mistake.
- Skip anything that held chemicals. A container that once held a cleaning product or non-food liquid is out, permanently, no matter how thoroughly it was washed.
- Don't trust random “food-safe” guesses. If a container is not clearly food-grade, treat it as not food-grade.
The goal is water you can drink without thinking twice. A container that makes you hesitate has already failed, because hesitation in an emergency is how people end up drinking something they shouldn't.
How to store tap water, and how long it keeps
Municipal tap water is already treated, so for storage you mostly need to get it into a clean, sealed, food-grade container and keep it away from light and warmth. Wash the container with soap and water first, fill it to the top to minimize trapped air, and seal it tight without touching the inside of the cap.
If your water comes from a well or you simply want the extra margin, you can treat it as you fill: add a small, measured amount of unscented liquid household bleach (regular strength, no additives), which is the same chlorine-based treatment municipal systems use. The commonly cited ratio is about eight drops, roughly an eighth of a teaspoon, per gallon. Stir, and let it stand 30 minutes before sealing. A faint chlorine smell means it worked.
Rough shelf life, assuming a clean container and cool, dark storage:

Notice the pattern: stored water rarely goes “bad” in the way food does. It goes stale or picks up a plastic taste, and the real risk is a container that was not clean to begin with. Which means the whole game is rotation, exactly like a first-in, first-out food supply. Water you filled and forgot two years ago is water you will not trust when you finally need it.
Where to keep it
Water is heavy, about 8.3 pounds per gallon, so a two-week family supply is several hundred pounds you have to actually put somewhere. Spread it out rather than stacking it all in one tower:
- Cool, dark, and stable. A closet, a basement, under beds. Heat and sunlight degrade plastic over time and encourage anything living in a less-than-perfect container.
- Away from chemicals and fumes. Do not store water next to gasoline, pesticides, or cleaning supplies. Some vapors can migrate through plastic over months.
- Off a bare concrete floor if it's easy. Put a barrel on a board or pallet. This one is more caution than crisis, but it costs nothing to do.
- Split across locations. Some in the kitchen, some in the garage, a few bottles in each vehicle. If one spot becomes unreachable, you have not lost everything.
When the stored supply runs low
A longer emergency can outlast even a good store, so it is worth knowing how to make questionable water safe and where to find more. Storage buys you time; these buy you the rest.
- Boiling is the most reliable method when you have heat. A rolling boil for one minute (three at high altitude) kills the microorganisms that make water dangerous. It does not remove chemical contamination, but for most emergencies the threat is biological.
- Chlorine treatment with the same unscented household bleach ratio as above works when you cannot boil.
- A dedicated water filter rated for pathogens (a quality gravity or pump filter) is worth owning, and it handles cloudy source water that treatment alone struggles with.
- Hidden water already in your home. Your water heater tank holds 40 gallons or more of drinkable water, and the tank of every toilet (not the bowl) is clean. In a pinch, that is days of supply you already own.
Stored water is your buffer. Purification is what turns a three-day supply into a three-week one, which is why the best water plan is both, not either.
The part that's easy to forget
Here is the failure that catches careful people: they store the water correctly, and then they forget it exists. The barrels get buried behind holiday decorations, the fill date fades off the cap, and three years later nobody is sure whether the water in the garage is six months old or four years old, so it does not get trusted and does not get rotated. A water supply you cannot vouch for is barely a supply at all.
